🔥 George’s Top Tip:
Roast low and slow — 160°C for 25 minutes per 500g plus 25 minutes resting. Rub with wholegrain mustard, fresh thyme, and a splash of oil before cooking for that golden crust. Leftovers? Make epic beef sarnies the next day.
