Lamb shanks are best braised low and slow for maximum tenderness. Start by searing them in a hot pan until golden brown. Then, slow cook for 2.5 - 3 hours in a mix of stock, red wine, and aromatics like rosemary and garlic. Let them rest for a few minutes before serving with mashed potatoes, buttery greens, or crusty bread to soak up the rich, savoury sauce.
